Ingredients:
– 1 cup chana dal
– 1 onion, finely chopped
– 2 tomatoes, chopped
– 2 green chilies, chopped
– 1-inch ginger, grated
– 4-5 garlic cloves, minced
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon garam masala
– 1 teaspoon coriander powder
– Salt to taste
– Curry leaves
– Mustard seeds
– Oil for frying and cooking
– Fresh coriander leaves for garnish

Recipe:
1. Soak the chana dal in water for 2-3 hours, then drain and grind it into a coarse paste without adding water.
2. Heat oil in a pan and make small vadas from the dal paste. Fry until they turn golden brown and crispy. Set them aside.
3. In the same pan, heat some more oil, add the mustard seeds, and let them splutter. Then add the curry leaves, chopped onions, green chilies, ginger, and garlic. Saute until the onions turn golden brown.
4. Add the chopped tomatoes and cook until they turn mushy. Then add the turmeric powder, red chili powder, garam masala, coriander powder, and salt. Cook the masala until the oil separates.
5. Add water to achieve the desired consistency, then gently slide in the vadas. Cover and cook for 10-15 minutes.
6. Garnish with fresh coriander leaves and serve hot with idli, dosa, or appam.
