– 2 cups of leftover rice
– 4 leftover chapathis
– 2 tomatoes, chopped
– 1 onion, finely diced
– 2 green chilies, slit
– 1 teaspoon of ginger-garlic paste
– 1 teaspoon of cumin seeds
– 1 teaspoon of coriander powder
– 1/2 teaspoon of red chili powder
– 1/2 teaspoon of turmeric powder
– Salt to taste
– Fresh coriander leaves for garnish
– 2 tablespoons of cooking oil

Recipe:

Leftover Rice Chapathi:
1. In a large mixing bowl, crumble the leftover chapathis and add in the leftover rice.
2. Mix well to combine and form a uniform mixture.
3. Divide the mixture into equal portions and shape them into small rounds or patties.
4. Heat a non-stick pan and add a little oil.
5. Place the rice chapathi rounds on the pan and cook until golden brown and crispy on both sides. Set aside.

Tomato Curry:
1. Heat oil in a saucepan and add in the cumin seeds.
2. Once the seeds start to crackle, add in the diced onion and green chilies. Saute until the onions turn translucent.
3. Add in the ginger-garlic paste and cook until the raw smell disappears.
4. Toss in the chopped tomatoes and cook until they turn mushy and release their juices.
5. Sprinkle in the coriander powder, red chili powder, turmeric powder, and salt. Mix well.
