Ingredients:
– 1 cup urad dal
– 1 cup chana dal
– 1 cup dried red chilies
– 1/2 cup sesame seeds
– 1/4 cup grated coconut
– 10-12 curry leaves
– 1 tsp asafoetida
– Salt to taste
– 2-3 tbsp oil

Recipe:
1. Heat a pan over medium heat and dry roast the urad dal and chana dal until they turn golden brown and fragrant.
2. In the same pan, dry roast the dried red chilies until they become crisp.
3. Next, dry roast the sesame seeds until they start to pop, then remove from the heat.
4. In a separate pan, dry roast the grated coconut until it turns golden brown.
5. Allow all the roasted ingredients to cool completely.
6. Once cooled, transfer the roasted urad dal, chana dal, and red chilies to a blender or spice grinder.
7. Add the sesame seeds, grated coconut, curry leaves, asafoetida, and salt to the blender or spice grinder.
8. Grind the mixture into a coarse powder, taking care not to over-grind it.
9. In a small pan, heat the oil until hot, then pour it over the ground mixture and mix well.
10. Allow the Idli Podi to cool completely before storing it in an airtight container.
