– 4 medium-sized potatoes, peeled and cubed
– 2 cups fresh spinach, chopped
– 1 onion, finely chopped
– 2 tomatoes, pureed
– 2 green chilies, finely chopped
– 1 tsp cumin seeds
– 1 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp garam masala
– 1 tsp coriander powder
– 1/2 tsp ginger-garlic paste
– Salt to taste
– 2 tbsp oil
– Fresh coriander leaves for garnish

Recipe:
1. In a pan, heat the oil and add cumin seeds. Let them splutter.
2. Add the chopped onions and green chilies. Saute until the onions turn golden brown.
3. Stir in the ginger-garlic paste and cook for a minute.
4. Add the tomato puree and cook until the oil separates from the mixture.
5. Now, add the turmeric powder, red chili powder, coriander powder, and garam masala. Mix well.
6. Add the cubed potatoes and cook for a few minutes.
7. Pour in a cup of water and let the potatoes cook until they are tender.
8. Once the potatoes are cooked, add the chopped spinach and salt. Cook for another few minutes until the spinach wilts.
9. Garnish with fresh coriander leaves and serve hot with chapathi or rice.
