– 500g Mutton, washed and drained
– 3 cups basmati rice, soaked for 30 minutes
– 3 onions, thinly sliced
– 4 tomatoes, chopped
– 1/2 cup plain yogurt
– 2 tbsp ginger-garlic paste
– 1/4 cup chopped mint leaves
– 1/4 cup chopped coriander leaves
– 4 green chillies, slit
– 4 cloves
– 4 cardamom pods
– 2-inch cinnamon stick
– 1 tsp fennel seeds
– 1/2 tsp turmeric powder
– 1 tsp red chilli powder
– 2 tsp biryani masala
– Salt to taste
– 4 cups water
– 1/4 cup ghee

Recipe:
1. Heat the ghee in a pressure cooker and add the whole spices (cloves, cardamom, cinnamon, and fennel seeds).
2. Add the sliced onions and sauté until golden brown.
3. Add the ginger-garlic paste and green chillies, and sauté for a few more minutes.
4. Now, add the mutton pieces and cook until they turn brown.
5. Add the chopped tomatoes, mint leaves, coriander leaves, and yogurt. Cook for 5 minutes.
6. Add the turmeric powder, red chilli powder, biryani masala, and salt. Mix well.
7. Drain the soaked rice and add it to the mutton mixture. Saute for 2 minutes.
8. Pour in the water and give it a gentle stir.
9. Close the pressure cooker lid and cook for 2 whistles on high flame, then reduce to low and cook for another 10 minutes.
10. Let the pressure release naturally and then open the lid. Fluff the biryani gently.
