Ingredients:
– 2 cups Basmati rice
– 1 lb chicken, cut into bite-sized pieces
– 2 onions, finely chopped
– 2 tomatoes, chopped
– 2 green chilies, slit
– 1 inch ginger, grated
– 4 cloves garlic, minced
– 1/2 cup coconut milk
– 2 cups chicken stock
– 1/2 teaspoon turmeric powder
– 1 teaspoon cumin powder
– 1 teaspoon coriander powder
– 1/2 teaspoon garam masala
– Salt, to taste
– Fresh coriander leaves, for garnish
– 2 tablespoons oil

Recipe:
1. Rinse the rice under cold water until the water runs clear, then soak for 30 minutes.
2. In a large pot, heat the oil over medium heat and sauté the onions, ginger, and garlic until golden brown.
3. Add the chicken and cook until it’s no longer pink, then add the tomatoes and green chilies and cook for a few minutes.
4. Stir in the turmeric, cumin, coriander powder, and salt, then add the drained rice and coconut milk. Cook for a few minutes.
5. Pour in the chicken stock and bring to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the rice is cooked and the liquid is absorbed.
6. Sprinkle with garam masala and garnish with fresh coriander leaves before serving.
