Ingredients:
– 250g okra (vendakkai), washed and sliced
– 1 onion, finely chopped
– 2 tomatoes, chopped
– 1 tbsp tamarind paste
– 1 tsp sambar powder
– 1/2 tsp turmeric powder
– 1/2 tsp red chilli powder
– 1/2 tsp mustard seeds
– A few curry leaves
– 2 tbsp oil
– Salt to taste
– Coriander leaves for garnish

Recipe:
1. Heat oil in a pan and add mustard seeds. Once they start to crackle, add chopped onions and curry leaves. Saute until the onions turn golden brown.
2. Add the chopped tomatoes and cook until they turn mushy. Then, add the sliced okra and sauté for a few minutes.
3. In a small bowl, mix the tamarind paste with 1 cup of water and strain the tamarind water into the pan. Add turmeric powder, sambar powder, red chilli powder, and salt. Mix well.
4. Cover the pan and let the curry simmer for 10-15 minutes until the okra is cooked and the flavors are well blended.
5. Garnish with chopped coriander leaves and serve hot with steamed rice or Indian bread.
