– 4-5 garlic cloves, minced
– 1/2 cup yogurt
– 1/4 cup mint leaves
– 1/4 cup coriander leaves
– 2 tablespoons ghee or oil
– Whole spices: cinnamon, cardamom, bay leaves, cloves
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 1/2 teaspoons biryani masala powder
– Salt to taste

Recipe:
– Heat ghee or oil in a pan and add the whole spices. Saute for a minute until aromatic.
– Add the sliced onions and sauté until golden brown. Then, add the ginger and garlic and sauté for a few minutes.
– Add the chopped snake gourd, green chilies, and tomatoes. Cook until the tomatoes are soft and the snake gourd is tender.
– Add the turmeric, red chili powder, biryani masala, and salt. Mix well and cook for a couple of minutes.
– In a separate pot, boil water and cook the soaked rice until it is 80% done. Drain and keep it aside.
– In the pan with the snake gourd mixture, layer half of the partially cooked rice, followed by a layer of mint and coriander leaves. Then, add the remaining rice on top.
– Pour yogurt over the rice and sprinkle a little biryani masala.
– Cover the pan with a tight lid and cook over low heat for 15-20 minutes until the rice is fully cooked and aromatic.
– Once done, let it rest for a few minutes before serving. Serve hot with raita or any preferred side dish.
