Baingan Ka Bharta is a delicious Punjabi flavored roasted aubergine sabzi cooked in onion & tomato gravy with aromatic Indian spices. So watch and learn how to make yummy Baingan Ka Bharta at home with chef Seema only on Swaad Anusaar
Ingredients -oil – 1 eggplant – 2 tsp of chopped ginger – 2 chopped onions – 4 chopped tomatoes – 1 tsp of salt – 1 tsp of red chilli powder – 1 – 1 1/2 cup of green peas – 1/2 tsp of coriander powder – 1/2 tsp of cumin powder – 2 green chillies

Method – Turn on the flame – Apply some oil on the eggplant – Roast the eggplant on the flame – Once done keep it aside in a plate and let it cool – In a pan add some oil, ginger and fry it properly – Add chopped onions let it cook until they turn slight pink then add tomatoes, salt, red chilli powder and mix everything properly – Turn the flame on low heat and add green peas and let the masala cook – Keep the roasted eggplant in water and remove it’s skin and then cut the eggplant into several pieces – Add the mashed eggplant into the masala and mix well -Cook on low flame for 10 minutes – Add coriander powder, cumin powder, green chillies and coriander leaves and mix everything.
– Baingan Ka Bharta is ready to be served.
