Veg Biryani

Ingredients:
– 2 cups of basmati rice
– Assorted vegetables such as carrots, peas, potatoes, and cauliflower
– 1 onion, thinly sliced
– 2 tomatoes, chopped
– 1/2 cup of plain yogurt
– 2 tablespoons of ghee or oil
– 1 teaspoon of cumin seeds
– 2-3 bay leaves
– 4-5 green cardamom pods
– 4-5 cloves
– 1 cinnamon stick
– 1 teaspoon of turmeric powder
– 1 teaspoon of red chili powder
– 1 teaspoon of garam masala
– Salt to taste
– Fresh cilantro and mint for garnish

Recipe:
1. Rinse the basmati rice under cold water until the water runs clear, then soak in water for 30 minutes.
2. In a large pot, heat the ghee or oil over medium heat and add the cumin seeds, bay leaves, cardamom, cloves, and cinnamon stick. Sauté until fragrant.
3. Add the sliced onion and cook until golden brown. Then, add the chopped tomatoes and cook until they soften.
4. Stir in the turmeric, red chili powder, and garam masala. Cook for a few minutes until the spices are well combined.
5. Add the assorted vegetables and cook for a few more minutes before stirring in the plain yogurt.
6. Drain the soaked rice and add it to the pot, then add enough water to cover the rice by about an inch. Season with salt, cover the pot, and let it simmer until the rice is cooked through.
7. Once the rice is cooked, remove the pot from the heat and let it sit for a few minutes before fluffing the rice with a fork.
8. Serve the Veg Biryani hot, garnished with freshly chopped cilantro and mint.
