Ingredients:
– 2 cups Basmati rice
– 500g chicken, cut into small pieces
– 1 onion, finely chopped
– 1 tomato, finely chopped
– 1/2 cup yogurt
– 1/4 cup milk
– 2 tbsp biryani masala
– 1/4 cup chopped coriander leaves
– 1/4 cup chopped mint leaves
– 4 tbsp ghee
– Salt to taste
– 1/2 tsp saffron strands
– 1/4 cup warm milk
– 2 tbsp oil
– 1 packet of frozen puff pastry sheets

Recipe:
1. Cook the Basmati rice until it is 70% done and set aside.
2. In a separate pan, heat the oil and ghee, then add the chopped onions and cook until they are golden brown.
3. Add the chicken pieces and cook until they are no longer pink.
4. Add the chopped tomatoes, yogurt, biryani masala, coriander, and mint leaves. Mix well and cook for a few minutes.
5. In a small bowl, mix the saffron strands with warm milk and set aside.
6. Roll out the puff pastry sheets and cut them into small squares.
7. Place a spoonful of the cooked rice onto each square, followed by a spoonful of the chicken mixture. Top with another spoonful of rice.
8. Fold the puff pastry squares into pockets and seal the edges with a fork.
9. Brush the pockets with the saffron milk and bake in a preheated oven at 180°C for 15-20 minutes or until golden brown.
10. Serve the Parda Biryani Babies hot with raita or chutney and enjoy!
