– 500g fresh tori (ridge gourd)

– 2 tomatoes, finely chopped
– 1 tsp ginger-garlic paste
– 1/2 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp coriander powder
– 1/2 tsp garam masala
– Salt to taste
– Fresh coriander leaves for garnish

Recipe:
1. Wash and peel the ridge gourd, then cut it into small cubes.
2. Heat oil in a pan and add cumin seeds. Let them splutter.
3. Add the chopped onions and sauté until golden brown.
4. Add the ginger-garlic paste and sauté for a minute.
5. Add the chopped tomatoes and cook until they turn soft.
6. Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well.
7. Add the chopped ridge gourd and mix well with the masala.
8. Cover and cook on low heat for about 15-20 minutes, stirring occasionally.
9. Once the ridge gourd is tender, garnish with fresh coriander leaves and serve hot with roti or rice.
