Ingredients:
– For the dough:
– 1 cup whole wheat flour
– 1/2 teaspoon turmeric
– 1/2 teaspoon red chili powder
– Salt to taste
– Water as needed
– For the Daal:
– 1 cup pigeon peas (toor dal)
– 1 onion, finely chopped
– 1 tomato, finely chopped
– 1 teaspoon ginger-garlic paste
– 1/2 teaspoon turmeric
– 1 teaspoon red chili powder
– 1 teaspoon coriander powder
– 1 teaspoon cumin seeds
– Salt to taste
– For the tempering:
– 2 tablespoons ghee
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– A pinch of asafoetida
– Few curry leaves
– 2-3 whole dry red chilies
– 1 teaspoon red chili powder
– 1 teaspoon coriander powder
– A pinch of turmeric
– 1 teaspoon sugar
– Salt to taste
– Fresh cilantro for garnish

Recipe:
1. In a large mixing bowl, combine the whole wheat flour, turmeric, red chili powder, and salt. Gradually add water and knead the dough until it’s smooth and firm. Cover and let it rest for 15-20 minutes.
2. In a pressure cooker, combine the pigeon peas, onion, tomato, ginger-garlic paste, turmeric, red chili powder, coriander powder, cumin seeds, and salt. Add 4 cups of water, close the lid, and cook for 3-4 whistles.
3. Meanwhile, roll out the dough into a thin sheet and cut it into diamond-shaped pieces.
4. Once the pressure is released from the cooker, open the lid and give the daal a good stir. Add extra water if needed to achieve the desired consistency. Bring it to a boil and add the prepared dough pieces one by one, stirring gently to avoid sticking.
5. Let the daal simmer for 15-20 minutes or until the dough is cooked through.
6. For the tempering, heat ghee in a small pan and add mustard seeds, cumin seeds, asafoetida, curry leaves, and whole dry red chilies. Once the seeds start spluttering, add red chili powder, coriander powder, turmeric, sugar, and salt. Stir well and pour it over the prepared daal dhokli.
7. Garnish with fresh cilantro and serve hot with a side of rice or roti.
