Welcome to my kitchen, where I will be sharing with you a traditional Maharashtrian recipe for Dahi Vada. This delicious dish, also known as Dahi Bhalla, is a popular Marathi recipe that is perfect for any occasion.

Ingredients:
– 1 cup urad dal (split black gram)
– 1/4 cup moong dal (split green gram)
– 1/4 cup chana dal (split chickpeas)
– 1/2 tsp cumin seeds
– 1/2 tsp black pepper
– 1/4 tsp asafoetida (hing)
– Salt, to taste
– Oil, for deep frying
– 4 cups yogurt
– 1/2 tsp cumin powder
– 1/2 tsp red chili powder
– Tamarind chutney
– Green chutney
– Fresh coriander leaves, for garnish
– Sev, for garnish

Recipe:
1. Soak the urad dal, moong dal, and chana dal in water for 4-5 hours.
2. Drain the water and grind the dals to a smooth batter, adding minimal water as needed.
3. Add cumin seeds, black pepper, asafoetida, and salt to the batter, and mix well.
4. Heat oil in a deep frying pan. Take small portions of the batter and fry them until golden brown.
5. Drain the fried vadas on a paper towel to remove excess oil.
6. Beat the yogurt, adding a little water to achieve a pouring consistency. Add salt, cumin powder, and red chili powder to the yogurt and mix well.
7. Soak the fried vadas in water for a few minutes, then gently squeeze out the water and arrange them in a serving dish.
8. Pour the beaten yogurt over the vadas, ensuring they are fully covered.
9. Drizzle tamarind chutney and green chutney over the vadas.
10. Garnish with fresh coriander leaves and sev.
11. Serve chilled and enjoy the burst of flavors in every bite!
