Ingredients:
– 1 cup chavali (black-eyed peas)
– 2 tbsp oil
– 1/2 tsp mustard seeds
– 1/2 tsp cumin seeds
– 1 medium onion, finely chopped
– 2-3 green chilies, slit
– 1/2 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp garam masala
– Salt to taste
– Fresh coriander leaves for garnish

Recipe:
1. Soak the chavali in water for 4-5 hours or overnight. Drain and rinse the chavali thoroughly.
2. In a pressure cooker, heat oil and add mustard seeds and cumin seeds. Once they splutter, add the chopped onions and green chilies. Saute until the onions turn translucent.
3. Add the drained chavali to the pressure cooker and mix well. Then, add turmeric powder, red chili powder, garam masala, and salt. Stir to combine the spices with the chavali.
4. Add enough water to cover the chavali and pressure cook for 2-3 whistles, or until the chavali is cooked through and tender.
5. Once the pressure releases, open the cooker and give the usal a good stir. Check for seasoning and adjust as needed.
6. Garnish with fresh coriander leaves and serve hot with steamed rice or roti.
