Ingredients:
– 1 kg mutton, cut into pieces
– 2 large onions, finely sliced
– 1 cup yogurt
– 1 tbsp ginger-garlic paste
– 1 cup oil
– 1 tsp cumin seeds
– 4-5 green cardamoms
– 1 black cardamom
– 4-5 cloves
– 1-inch cinnamon stick
– 1 tsp black peppercorns
– 1 tsp red chili powder
– 1 tsp turmeric powder
– 1 tsp coriander powder
– 1 tsp cumin powder
– Salt to taste
– Fresh coriander leaves for garnish
– 2-3 green chilies, sliced

Recipe:
1. In a pot, heat oil and add the sliced onions. Fry until golden brown.
2. Add the mutton pieces and ginger-garlic paste. Cook until the mutton changes color.
3. In a bowl, whisk the yogurt and add it to the mutton. Cook on high heat until the water evaporates.
4. Add the homemade masala (cumin seeds, green cardamom, black cardamom, cloves, cinnamon stick, black peppercorns) and continue to cook for a few minutes.
5. Now add red chili powder, turmeric powder, coriander powder, cumin powder, and salt. Mix well.
6. Add water, cover the pot, and cook on low heat until the mutton is tender and the oil separates.
7. Garnish with fresh coriander leaves and green chilies.
8. Serve hot with naan or rice.
