Mumbais Pav Bhaji Recipe

– 3-4 cloves of garlic, minced
– 1-inch piece of ginger, grated
– 2-3 green chilies, finely chopped
– 1 teaspoon cumin seeds
– 1 teaspoon red chili powder
– 1 teaspoon pav bhaji masala
– Salt to taste
– 4-5 tablespoons butter
– Fresh coriander leaves, chopped
– Pav (buns)

Recipe:
1. Heat a tablespoon of butter in a pan and add cumin seeds. Once they splutter, add onions and sauté until they turn golden brown.
2. Add ginger, garlic, and green chilies, and sauté for a minute.
3. Add the bell pepper and cook until it softens.
4. Add tomatoes and cook until they turn mushy.
5. Add the pav bhaji masala, red chili powder, and salt. Mix well and cook for a couple of minutes.
6. Add the mashed potatoes, cauliflower, and green peas. Mix everything together and add a little water to bring it to a thick consistency.
7. Cook for 10-15 minutes on low heat, mashing the veggies with a masher as they cook.
8. Once the bhaji is ready, garnish with chopped coriander leaves and a dollop of butter.
9. For the pav, slit them into half, spread butter, and lightly toast on a pan.
