Ingredients
– 1 cup pigeon pea lentils (toor dal)
– 2 ripe tomatoes, chopped
– 1 onion, finely chopped
– 2 green chilies, slit
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder
– Salt to taste
– 3 cups water
– For tempering: 2 tablespoons ghee or oil, 1 teaspoon mustard seeds, 1 teaspoon cumin seeds, 2-3 dry red chilies, a pinch of asafoetida (hing), fresh coriander leaves for garnish

Recipe
1. Rinse the toor dal under running water and soak for 30 minutes. Drain the water and transfer the dal to a pressure cooker.
2. Add the chopped tomatoes, onion, green chilies, turmeric powder, red chili powder, salt, and water to the pressure cooker. Close the lid and cook for 4-5 whistles, or until the dal is soft and mushy.
3. Once the pressure subsides, open the lid, and whisk the dal to a smooth consistency.
4. In a separate pan, heat ghee or oil for tempering. Add mustard seeds and let them splutter. Add cumin seeds, dry red chilies, and asafoetida.
5. Pour the tempering over the cooked dal and mix well.
