2. Pressure cook the cowpeas with enough water for 3-4 whistles or until they are soft.
3. In a deep bottomed pan, heat the sesame oil and add mustard seeds, fenugreek seeds, dry red chilies, and curry leaves.
4. Once the mustard seeds start to splutter, add the tamarind juice, turmeric powder, and salt. Let it boil for 2-3 minutes.
5. Add the cooked cowpeas and allow the mixture to simmer on low flame for 10-15 minutes.
6. Finally, add the asafoetida and switch off the flame.
