– 3-4 garlic cloves, minced
– 1 teaspoon cumin seeds
– 1 teaspoon red chili powder
– 1 teaspoon garam masala
– 1/2 teaspoon turmeric powder
– Salt to taste
– 2 tablespoons cooking oil
– Fresh coriander leaves for garnish

Recipe:
1. Heat 1 tablespoon of oil in a pan and add the chopped spinach. Saute until the spinach wilts and then transfer to a blender. Blend into a smooth puree and set aside.
2. In the same pan, heat the remaining oil and add the cumin seeds. Once they start to splutter, add the chopped onion and saute until golden brown.
3. Add the chopped tomatoes, green chilies, ginger, and garlic. Cook until the tomatoes turn mushy and the oil starts to separate.
4. Add the red chili powder, turmeric powder, and salt. Mix well and cook for a minute.
5. Now, add the spinach puree and cook for a few minutes until the raw smell disappears.
6. Gently add the paneer cubes and simmer for 5-7 minutes until the flavors meld together.
7. Sprinkle the garam masala and give it a quick stir.
8. Garnish with fresh coriander leaves and serve hot with roti or rice.
