This flavorful and aromatic dish is sure to be a hit at your festive gathering. Let’s dive in and create some magic in the kitchen!

Ingredients:

– 1 kg mutton, cut into pieces
– 3 cups basmati rice, soaked for 30 minutes
– 4 onions, thinly sliced
– 1 cup yogurt
– 4 tomatoes, chopped
– 4 green chilies, slit
– 1/2 cup fresh coriander, chopped
– 1/2 cup fresh mint, chopped
– 1/4 cup ginger-garlic paste
– 1/2 tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp garam masala powder
– 1/2 tsp cumin seeds
– 1/2 tsp black cumin seeds
– 4-5 cloves
– 4-5 green cardamoms
– 1-inch cinnamon stick
– 1/4 tsp nutmeg, grated
– 1/4 tsp mace powder
– 1 tbsp lemon juice
– Salt to taste
– 1/2 cup ghee
– 1/2 cup milk, saffron-infused

Recipe:

1. Heat ghee in a large pot and add the sliced onions. Fry until golden brown and crisp. Remove half of the onions and set aside for garnish.
2. In the same pot, add the whole spices and sauté until fragrant. Add the ginger-garlic paste and cook until the raw smell disappears.
3. Stir in the mutton pieces and cook until they are browned on all sides. Add the chopped tomatoes, yogurt, and all the powdered spices. Cook until the oil separates.
4. Meanwhile, bring a large pot of water to a boil and cook the soaked rice until it is 70% done. Drain and set aside.
5. Layer the partially cooked rice over the mutton mixture. Sprinkle the fried onions, chopped coriander, mint, green chilies, and saffron-infused milk on top.
6. Cover the pot with a tight-fitting lid and cook on low heat for 25-30 minutes, allowing the flavors to meld together.
7. Gently mix the layers before serving, ensuring that the mutton and rice are well combined. Serve hot with raita and salad on the side.
