Ingredients:
– 500g mushrooms, cleaned and sliced
– 2 onions, finely chopped
– 2 tomatoes, finely chopped
– 2 green chilies, slit
– 1-inch piece of ginger, grated
– 4 cloves of garlic, minced
– 1 sprig of curry leaves
– 1 tsp mustard seeds
– 1 tsp cumin seeds
– ½ tsp turmeric powder
– 1 tsp red chili powder
– 1 tsp coriander powder
– ½ tsp garam masala
– Salt to taste
– 2 tbsp coconut oil
– Fresh coriander leaves for garnish

Recipe:
1. Heat the coconut oil in a pan and add the mustard seeds. Once they start popping, add the cumin seeds and curry leaves.
2. Add the chopped onions and sauté until they turn translucent. Then, add the green chilies, ginger, and garlic, and sauté for another 2 minutes.
3. Add the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook until the tomatoes turn mushy.
4. Add the sliced mushrooms and mix until they are well coated with the masala. Cover and cook for 5-7 minutes, stirring occasionally.
5. Once the mushrooms are cooked, add the garam masala and mix well. Cook for another 2-3 minutes and garnish with fresh coriander leaves.
