– 1 liter full-fat milk

– 1 tbsp lemon juice

– 1 tbsp ghee (clarified butter)
– Parchment paper
– 1/4 cup warm milk

Recipe:
1. In a large heavy-bottomed pan, bring the milk to a boil stirring continuously to prevent it from sticking to the bottom.
2. Once the milk comes to a boil, reduce the heat and add the lemon juice. Stir gently and continue to cook until the milk curdles.
3. Once the milk has curdled, remove from the heat and allow it to sit for a few minutes.
4. Line a tray with parchment paper and set aside.
5. Pour the curdled milk into a muslin cloth and strain out the excess whey. Squeeze out any remaining liquid and transfer the chenna (paneer) to a separate bowl.
6. In a separate pan, heat ghee and add the chenna. Cook for a few minutes until it begins to thicken.
7. Stir in the sugar and cardamom powder, and continue to cook until the mixture thickens and leaves the sides of the pan.
8. Pour the warm milk into the chenna mixture and stir until well combined.
9. Transfer the mixture to the lined tray and spread it evenly.
10. Garnish with chopped nuts and gently press them into the mixture.
11. Allow the kalakand to set for a few hours before cutting into squares and serving.
