Ingredients:
– Fresh gooseberries
– Urad dal
– Chana dal
– Dried red chilies
– Fresh curry leaves
– Asafoetida
– Tamarind
– Salt
– Oil

Recipe:
1. Begin by washing the gooseberries and removing the seeds. Chop them into small pieces and set aside.
2. Heat some oil in a pan and add urad dal, chana dal, dried red chilies, and curry leaves. Saute until the dals turn golden brown and the chilies become aromatic.
3. Add the chopped gooseberries to the pan and sauté until they become soft and tender.
4. Once the gooseberries are cooked, add a small piece of tamarind, a pinch of asafoetida, and salt to taste. Mix well and allow the mixture to cool.
5. Once the mixture is cool, transfer it to a blender and blend it into a coarse paste. You can add a little water if needed to help with the blending process.
6. Transfer the thuvaiyal to a serving bowl and garnish with a drizzle of oil on top.
