– 2 tablespoons besan (gram flour)

– 3 cups water

– 1 teaspoon cumin seeds
– 1 teaspoon mustard seeds
– 1-2 dry red chilies
– A pinch of asafoetida
– Curry leaves
– For Pakora:
– 1 cup besan (gram flour)
– 1 onion, finely chopped
– 1 green chili, finely chopped
– 1 teaspoon red chili powder
– Salt to taste
– Water as needed
– Oil for frying

Recipe:
1. In a bowl, whisk together the yogurt, besan, turmeric powder, red chili powder, and salt. Gradually add water and mix well to form a smooth mixture. Set aside.
2. Heat oil in a pan and add cumin seeds, mustard seeds, dry red chilies, asafoetida, and curry leaves. Sauté until the spices release their aroma.
3. Pour the yogurt mixture into the pan and bring to a boil. Simmer on low heat, stirring occasionally, until the kadhi thickens.
4. To make the pakoras, mix besan, chopped onion, green chili, red chili powder, and salt in a bowl. Add water gradually to form a thick batter.
5. Heat oil in a deep pan and drop spoonfuls of the batter into the hot oil. Fry until the pakoras are golden brown and crisp. Drain on paper towels.
6. Add the pakoras to the kadhi and simmer for a few more minutes.
7. Serve hot with steamed rice or chapatis.
