Appam

– As a food chef and blogger, I am excited to share with you one of my favorite South Indian recipes – sivakasi samayal appam. Appam is a popular dish in the southern region of India, known for its soft and fluffy texture, and delicious flavor.
– This traditional dish is perfect for breakfast, brunch, or even as a snack. It is made with simple ingredients and is easy to prepare, making it a great addition to your recipe collection.

Ingredients:
– 1 cup of raw rice
– 1/4 cup of grated coconut
– 1/4 cup of cooked rice
– 1/4 cup of sugar
– 1/2 tsp of dry yeast
– Salt to taste
– Water as needed
– Oil for greasing the pan

Recipe:
1. Soak the raw rice in water for 5-6 hours, then drain the water and grind it to a smooth batter along with grated coconut and cooked rice.
2. Dissolve the yeast in 1/4 cup of warm water and add it to the batter along with sugar and salt. Mix well and let it ferment for 6-8 hours, or overnight, until the batter doubles in volume.
3. Heat an appam pan and grease it with oil. Pour a ladleful of batter into the center of the pan and swirl it around to spread the batter to the edges.
4. Cover the pan and cook the appam on low heat for 2-3 minutes, or until the edges turn golden brown and crisp, and the center is soft and fluffy.
5. Serve the sivakasi samayal appam with coconut milk, stew, or any curry of your choice.
