Ingredients:
– 2 medium-sized brinjals
– 2 tbsp oil
– 1 tsp mustard seeds
– 1 tsp cumin seeds
– 1 sprig of curry leaves
– 2-3 dried red chilies
– 1 small onion, chopped
– 2 garlic cloves, chopped
– 1-inch piece of ginger, chopped
– 2 tbsp tamarind pulp
– Salt to taste
– 1/2 tsp turmeric powder
– 1/2 tsp red chili powder
– 1/2 tsp coriander powder
– 1/2 tsp cumin powder

Recipe:
1. Wash the brinjals and roast them over an open flame until the skin is charred and the flesh is soft. Let them cool, then remove the charred skin and mash the pulp.
2. Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Once they splutter, add dried red chilies, chopped onions, garlic, and ginger. Saute until the onions turn golden brown.
3. Add the mashed brinjal pulp to the pan and mix well. Cook for a few minutes.
4. Add tamarind pulp, salt, turmeric powder, red chili powder, coriander powder, and cumin powder. Mix everything thoroughly and cook for another 5-7 minutes.
5. Once the chutney reaches a thick consistency, remove it from the heat and let it cool.
6. Transfer the chutney to a serving bowl and garnish with fresh coriander leaves.
