Ingredients:
– 1 cup of Toor Dal (split pigeon peas)
– 2 cups of drumstick leaves (muringayila)
– 1 small onion, finely chopped
– 3-4 green chilies, slit
– 1 ½ cups of thick coconut milk
– 1 ½ cups of water
– ½ teaspoon of turmeric powder
– Salt to taste
Recipe:
1. In a pressure cooker, add the toor dal, chopped onion, green chilies, turmeric powder, and water. Cook for 3-4 whistles or until the dal is soft and well cooked.
2. Once the pressure is released, open the cooker and add the drumstick leaves to the dal. Cook for another 5 minutes on medium heat.
3. Add the thick coconut milk and salt to the dal mixture. Stir well and let it simmer for 2-3 minutes.
4. In a separate pan, heat some coconut oil and splutter mustard seeds, dried red chilies, and curry leaves for the tempering.
5. Pour the tempering over the dal mixture and give it a quick stir.
