Ingredients:
– 2 cups fresh spinach (palak)
– 200g paneer (cottage cheese), cubed
– 1 large onion, finely chopped
– 2 tomatoes, pureed
– 2 green chilies, chopped
– 1-inch piece of ginger, grated
– 4 cloves of garlic, minced
– 1 tsp cumin seeds
– 1 tsp garam masala
– 1/2 tsp turmeric powder
– 1/2 tsp red chili powder
– 1/2 cup heavy cream
– Salt, to taste
– 2 tbsp cooking oil or ghee
– Fresh coriander leaves, for garnish
Recipe:
1. Blanch the spinach leaves in boiling water for 2 minutes. Transfer to a bowl of ice water to retain the vibrant green color. Drain and blend into a smooth puree.
2. Heat oil in a pan and add cumin seeds. When they start to splutter, add the chopped onions, green chilies, grated ginger, and minced garlic. Sauté until the onions turn golden brown.
3. Pour in the tomato puree and cook until the oil separates. Add the turmeric powder, red chili powder, and garam masala. Cook for a few minutes.
4. Add the spinach puree and mix well. Let it simmer for 5 minutes.
5. Gently add the cubed paneer to the spinach mixture and simmer for another 5 minutes.
6. Pour in the heavy cream, sprinkle some salt, and simmer for 2-3 minutes.
7. Garnish with fresh coriander leaves and serve hot with chapathi or rice.
