Ingredients:
– 2 cups basmati rice
– 200g button mushrooms, sliced
– 1 large onion, thinly sliced
– 2 tomatoes, finely chopped
– 1/2 cup plain yogurt
– 2-3 green chilies, slit
– 1-inch ginger, grated
– 4-5 garlic cloves, minced
– 1/2 cup mint leaves, chopped
– 1/2 cup coriander leaves, chopped
– 2 bay leaves
– 4-5 cloves
– 2-inch cinnamon stick
– 4-5 cardamom pods
– 1 tsp cumin seeds
– 1 tsp fennel seeds
– 1/2 tsp turmeric powder
– 1 tsp red chili powder
– 1/2 tsp garam masala
– Salt to taste
– 3 cups water
– 2 tbsp ghee or oil

Recipe:
1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain and set aside.
2. In a large pan, heat ghee or oil over medium heat. Add the whole spices – bay leaves, cloves, cinnamon, cardamom, cumin seeds, and fennel seeds. Sauté until fragrant.
3. Add the sliced onions and sauté until they turn golden brown. Then, add the grated ginger and minced garlic, and cook for another 2-3 minutes.
4. Stir in the chopped tomatoes and cook until they soften. Add the sliced mushrooms and cook until they release their moisture and turn tender.
5. Add the turmeric powder, red chili powder, and garam masala, and mix well. Cook for a couple of minutes, then add the plain yogurt and mix until well combined.
6. Add the soaked basmati rice to the pan and gently mix to coat the rice with the mushroom and spice mixture. Pour in the water, and season with salt. Bring to a boil, then cover and simmer on low heat for 15-20 minutes, or until the rice is tender and the water has been absorbed.
7. Finally, add the chopped mint and coriander leaves, and gently fluff the biryani with a fork. Serve hot with raita or gravy of your choice.
