Ingredients:
– Fresh spinach leaves
– Grated coconut
– Mustard seeds
– Curry leaves
– Turmeric powder
– Green chilies
– Shallots
– Coconut oil
– Salt

Recipe:
1. Start by thoroughly washing the spinach leaves and then finely chopping them. Set aside.
2. In a pan, heat coconut oil over medium heat and add mustard seeds. Once the seeds start to splutter, add in the finely chopped shallots, green chilies, and curry leaves.
3. Sauté the ingredients until the shallots turn golden brown, then add in the chopped spinach leaves.
4. Sprinkle in turmeric powder and salt to taste, and continue to stir-fry the spinach until it wilts and cooks down.
