Ingredients:
– 1 kg mutton, washed and drained
– 2 cups basmati rice, soaked for 30 minutes
– 1 cup yogurt
– 1 cup milk
– 1 cup fried onions
– 4-5 green chilies
– 1 tbsp ginger garlic paste
– 1 tbsp white cumin seeds
– 1 tbsp coriander powder
– 1 tbsp garam masala
– 1 tbsp white pepper powder
– 1 tsp saffron, dissolved in milk
– 1 cup fresh coriander, chopped
– 1 cup fresh mint, chopped
– Salt to taste
– 1/2 cup oil
– 2-3 tbsp ghee

Recipe:
1. In a large pot, heat the oil and add the mutton. Cook until the water evaporates and the mutton changes color.
2. Add ginger garlic paste, white cumin seeds, coriander powder, garam masala, white pepper powder, and salt. Cook for a few minutes.
3. In a separate pot, boil the soaked rice until it is 3/4th done. Drain and set aside.
4. In the pot with the mutton, layer half of the rice on top and sprinkle half of the fried onions, green chilies, and saffron milk.
5. Layer the remaining rice on top and sprinkle the remaining fried onions, green chilies, saffron milk, fresh coriander, and mint.
6. Pour the yogurt and milk mixture evenly over the rice. Drizzle ghee on top.
7. Cover and cook on low heat for 15-20 minutes, or until the rice is fully cooked and the mutton is tender.
