Ingredients:
– 2 cups whole wheat flour
– 1 cup fresh fenugreek leaves (finely chopped)
– 1/4 cup yogurt
– 1 tablespoon ginger paste
– 1 tablespoon green chili paste
– 1/2 teaspoon turmeric powder
– 1 teaspoon red chili powder
– 1 teaspoon coriander-cumin powder
– Salt to taste
– 1 tablespoon oil
– Water (as needed for kneading)

Recipe:
1. In a large mixing bowl, combine the whole wheat flour, chopped fenugreek leaves, yogurt, ginger paste, green chili paste, turmeric powder, red chili powder, coriander-cumin powder, salt, and oil.
2. Gradually add water and knead the mixture into a smooth dough. Cover the dough and let it rest for 15-20 minutes.
3. Divide the dough into small lemon-sized balls and roll them out into thin, round theplas using a rolling pin.
4. Heat a skillet or tava over medium heat and place a rolled thepla on it. Cook for a minute, then flip it over and drizzle a little oil on top.
5. Cook the thepla until it is golden brown and has crisp spots on both sides. Repeat the process for the remaining dough balls.
6. Serve the Methi Theplas hot with a dollop of butter, yogurt, or pickles.
