– 1 tsp red chili powder
– 1 tsp coriander powder

Instructions:

1. Start by peeling and cutting the potatoes and eggplant into small cubes.
2. Heat the oil in a pan over medium heat and add the cumin seeds.
3. Once the seeds start to splutter, add the chopped onions and sauté until they turn golden brown.
4. Add the minced garlic and grated ginger, and sauté for another minute.
5. Now, add the pureed tomatoes and cook for 5-6 minutes, stirring occasionally.
6. Mix in the turmeric powder, red chili powder, coriander powder, and salt.
7. Add the potatoes and eggplant to the pan and stir well to coat them with the masala.
8. Cover the pan and let the vegetables cook for 15-20 minutes, or until they are tender.
9. Once the vegetables are cooked, sprinkle garam masala and fresh coriander leaves on top.
