Ingredients:
– 1 cup Basmati rice
– 200g Goan sausage (Choris), sliced
– 1 large onion, finely chopped
– 1 tomato, diced
– 2-3 green chilies, slit
– 1 inch ginger, finely chopped
– 3-4 garlic cloves, minced
– 1/2 tsp turmeric powder
– 1 tsp red chili powder
– 1/2 tsp garam masala
– Salt to taste
– 2 cups water
– Fresh coriander leaves for garnish
– 2-3 tbsp vegetable oil

Recipe:
1. Heat oil in a pan and fry the sliced Goan sausages until they release their flavorful oils. Remove and set aside.
2. In the same pan, add the chopped onions and sauté until they turn golden brown.
3. Add the chopped ginger and garlic, and sauté until the raw aroma disappears.
4. Stir in the diced tomatoes and slit green chilies, and cook until the tomatoes turn soft.
5. Add the turmeric powder, red chili powder, and garam masala, and mix well.
6. Now, add the washed Basmati rice and fry for a few minutes until the rice is coated with the spices.
7. Pour in the water, add salt to taste, and bring it to a boil.
8. Once the water starts boiling, reduce the heat, cover the pan, and let the rice cook until it’s done.
9. Finally, add the fried Goan sausages to the cooked rice and gently mix everything together.
10. Garnish with fresh coriander leaves and serve hot with raita or salad.
