Ingredients:
– 1 cup of semolina (sooji)
– 1 cup of sugar
– 1 cup of mixed fruits (bananas, mangoes, pineapples)
– 4 cups of water
– 1/4 cup of ghee
– 1/4 cup of cashews and raisins
– 1/2 teaspoon of cardamom powder
– A pinch of saffron

Recipe:
1. Heat the ghee in a pan and fry the cashews and raisins until golden brown. Remove and set aside.
2. In the same pan, roast the sooji until it turns aromatic and golden brown.
3. In another pot, bring the water to a boil and add the saffron.
4. Slowly add the roasted sooji to the boiling water, stirring constantly to avoid lumps.
5. Once the sooji is cooked and the water has evaporated, add the sugar and mix well.
6. Now, add the mixed fruits and mix gently until well combined.
7. Finally, add the cardamom powder, fried cashews, and raisins, and mix well.
8. Fruit Kesari is now ready to be served hot or cold.
