Ingredients:
– 1 cup Basmati rice
– 1/2 cup moong dal
– 1 potato, diced
– 1/2 cup cauliflower florets
– 1/2 cup green peas
– 2-3 green chilies
– 1-inch piece ginger, grated
– 2-3 bay leaves
– 4-5 whole cloves
– 4-5 whole black peppercorns
– 2-3 cardamom pods
– 1 cinnamon stick
– 1/2 tsp turmeric powder
– Salt to taste
– 3 tbsp ghee
– 1/2 tsp cumin seeds
– 1/2 tsp asafoetida (hing)
– 4 cups water
– Fresh coriander leaves for garnish

Recipe:
1. Rinse the rice and moong dal, then soak them in water for 30 minutes.
2. Heat 2 tbsp ghee in a pressure cooker and add the cumin seeds, asafoetida, bay leaves, cloves, peppercorns, cardamom, and cinnamon. Sauté until fragrant.
3. Add the diced potatoes, cauliflower, green peas, green chilies, and grated ginger. Cook for a few minutes.
4. Drain the soaked rice and moong dal, and add them to the pressure cooker. Stir in the turmeric powder and salt.
5. Pour in the water and mix well. Close the pressure cooker lid and cook for 2-3 whistles.
6. Once the pressure is released, open the cooker and gently fluff the khichdi with a fork.
7. Heat 1 tbsp ghee in a small pan and temper with some more cumin seeds and a pinch of asafoetida. Pour the tempering over the khichdi.
8. Garnish with fresh coriander leaves and serve hot with a side of fried papad and pickle.
