Ingredients:
– 1 cup Sabudana (sago)
– 2-3 medium-sized potatoes, boiled and mashed
– 1-2 green chilies, finely chopped
– A handful of roasted peanuts, coarsely crushed
– 1 tsp cumin seeds
– 2-3 tbsp finely chopped cilantro
– Salt to taste
– Oil for frying

Recipe:
1. Rinse the sabudana under cold water until the water runs clear, then soak it in enough water to cover it for at least 4 hours or overnight.
2. Once the sabudana has absorbed the water and turned fluffy, drain any excess water and transfer it to a large mixing bowl.
3. Add the boiled and mashed potatoes, green chilies, crushed peanuts, cumin seeds, chopped cilantro, and salt to the bowl with the sabudana. Mix everything together until well combined.
4. Divide the mixture into equal-sized portions and shape them into round patties.
5. Heat oil in a pan over medium heat. Once the oil is hot, carefully add the sabudana vada patties and fry until they are golden brown and crispy on both sides.
6. Once cooked, remove the patties from the oil and place them on a paper towel to drain any excess oil.
7. Serve the sabudana vada hot with your favorite chutney or dip and enjoy your delicious creation!
