– Welcome back to Aparna’s Magic, where we explore the wonders of Indian cuisine.
– In today’s episode, we’ll be diving into the flavors of Gobi Capsicum Masala, also known as Cauliflower Capsicum Curry.
– This aromatic dish is a perfect blend of spices, veggies, and a touch of magic.

Ingredients:
– 1 medium-sized cauliflower, cut into florets
– 2 medium-sized capsicums, diced
– 1 large onion, finely chopped
– 2 tomatoes, pureed
– 1 tsp ginger-garlic paste
– 1 tsp cumin seeds
– 1 tsp turmeric powder
– 1 tbsp coriander powder
– 1 tsp garam masala
– Salt to taste
– 2 tbsp oil
– Fresh coriander leaves for garnish

Recipe:
1. Heat oil in a pan and add cumin seeds. Once they splutter, add the chopped onions and sauté until golden brown.
2. Add the ginger-garlic paste and sauté for a minute, then add the tomato puree and cook until the oil separates.
3. Add the turmeric, coriander powder, and garam masala, and cook for a few minutes.
4. Add the cauliflower florets and diced capsicums, and mix well to coat them with the masala.
5. Add a cup of water, cover the pan, and let it cook for about 10-15 minutes, or until the veggies are tender.
6. Once the veggies are cooked, garnish with fresh coriander leaves and serve hot with rice or roti.
