Ingredients:

– 1 cup toor dal (split pigeon peas)
– 2-3 drumsticks, cut into 2-inch pieces
– 1 small onion, finely chopped
– 2 tomatoes, chopped
– 1 green chili, slit lengthwise
– 1 teaspoon tamarind paste
– 1 teaspoon sambar powder
– 1/2 teaspoon turmeric powder
– Salt to taste
– Water
– For tempering:
– 1 tablespoon oil
– 1 teaspoon mustard seeds
– 1 teaspoon cumin seeds
– 2-3 dry red chilies
– A pinch of asafoetida
– Curry leaves

Recipe:

1. Cook the toor dal in a pressure cooker with 2 cups of water until it is soft and mushy. Set aside.
2. In a large pot, add the drumsticks, onions, tomatoes, green chili, tamarind paste, sambar powder, turmeric powder, and salt.
3. Add 3 cups of water and bring to a boil. Simmer until the vegetables are cooked through.
4. Add the cooked dal to the pot and mix well. Adjust the consistency by adding more water if needed.
5. In a small pan, heat the oil for tempering. Add the mustard seeds and let them splutter. Add the cumin seeds, dry red chilies, asafoetida, and curry leaves. Fry until fragrant.
6. Pour the tempering over the sambar and mix well.
7. Serve hot with steamed rice or idli.
