Ingredients: (to serve 2-4 people) Grinded carrot – 1 cup Sugar – 1 cups Milk – 1 cup (you can also use evaporated milk) Cashewnut pieces – 2 tablespoons Cardamom powder – 1/2 teaspoon or 3 whole cardamoms

Ghee – 4 tablespoons

Method: 1. Add the grinded carrot and milk in a pan and cook in medium flame for 6-8 minutes until it thickens well, stirring occassionally. 2. When this is getting ready, crush the 3 cardamoms with 2 tablespoons of sugar (from the 1 cup of sugar we are using) in a mixer jar and then mix it with the remaining sugar. 3. Now add the sugar to the thickened carrot mixture and stir well. 4. When the sugar melts, it will loosen again. Cook until it thickens again for about 2-3 minutes. 5. Heat the ghee in another pan and when it is hot, add the cashewnut and fry for a minute, until it is golden colour. 6. Now pour this ghee mixture to the thickened carrot halwa and mix well.

7. Stir for another 2 minutes, until all the ghee is absorbed and serve.

    Akshuskitchen Bone Sambar Chicken Sambar Traditional South Indian Curry

    – As a food chef and blogger, I am excited to share with you a traditional South Indian curry recipe that is a favorite in my family – Bone Sambar Chicken Sambar.
    – This flavorful and aromatic dish is a perfect balance of spices and ingredients that will tantalize your taste buds and transport you to the heart of South India.
    – Whether you are a seasoned chef or new to Indian cuisine, this recipe will be a delightful addition to your culinary repertoire.

    Ingredients:
    – 500g bone-in chicken pieces
    – 1 onion, finely chopped
    – 2 tomatoes, chopped
    – 2 green chilies, slit
    – 2 sprigs of curry leaves
    – 1 tsp ginger-garlic paste
    – 1/2 tsp turmeric powder
    – 2 tbsp sambar powder
    – 1/2 cup toor dal (split pigeon peas)
    – 3 cups water
    – Salt to taste
    – 2 tbsp oil
    – 1/2 tsp mustard seeds
    – 1/2 tsp cumin seeds
    – A pinch of asafoetida
    – Fresh coriander leaves for garnish

    Recipe:
    1. In a pressure cooker, heat oil and add mustard seeds, cumin seeds, and asafoetida. Allow them to splutter.
    2. Add the finely chopped onion, green chilies, and curry leaves. Saute until the onions turn translucent.
    3. Add the ginger-garlic paste and saute for a few minutes until the raw smell disappears.
    4. Stir in the tomatoes and cook until they turn mushy.
    5. Add the turmeric powder, sambar powder, and salt. Mix well.
    6. Add the chicken pieces and coat them in the masala. Cook for 5 minutes.
    7. Rinse the toor dal and add it to the cooker along with 3 cups of water. Mix well.
    8. Close the pressure cooker and cook for 3 whistles or until the chicken and dal are cooked.
    9. Once done, garnish with fresh coriander leaves and serve hot with steamed rice or dosa.
