Welcome to Priyashi’s Kitchen, where we explore the rich and vibrant flavors of Rajasthan. Today, we’re diving into the world of Rajasthani cuisine with a traditional recipe for Badi Ki Sabzi – a mouthwatering dish made with Mangodi, a type of moong dal badi. Get ready to tantalize your taste buds with this authentic Rajasthani recipe!

Ingredients:
1 cup Mangodi (moong dal badi)
2 tbsp vegetable oil
1 tsp cumin seeds
1 onion, finely chopped
2 tomatoes, pureed
1 tsp ginger-garlic paste
1/2 tsp turmeric powder
1 tsp coriander powder
1/2 tsp red chili powder
1/2 tsp garam masala
Salt to taste
Fresh coriander leaves for garnish

Recipe:
In a pan, heat the vegetable oil and add the Mangodi. Fry until golden brown and crispy. Remove from the pan and set aside.
In the same pan, add the cumin seeds and let them splutter. Then, add the chopped onion and sauté until golden brown.
Add the ginger-garlic paste and sauté for a few minutes until the raw smell disappears.
Now, add the tomato puree and cook until the oil separates from the mixture.
Add the turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for a couple of minutes.
Add the fried Mangodi to the pan and stir to combine with the spices.
Pour in some water, cover the pan, and let the sabzi simmer for 5-7 minutes.
Once the Mangodi is tender and the gravy has thickened, sprinkle some garam masala and garnish with fresh coriander leaves.
